Locally Inspired Fine Dining at The Wilde on 27

At The Wilde on 27, we are proud to support local Canadian and Alberta producers, crafting refined dining experiences that showcase the best our region has to offer. Our commitment to sourcing fresh, high-quality ingredients from trusted local suppliers allows us to create seasonal menus that celebrate Canadian culinary excellence.

One of our unique partnerships is with Spruce Cliff Honey, which helps us maintain rooftop beehives right on our third-floor patio. The honey harvested from these hives adds a distinct, hyper-local flavor to a variety of our dishes and cocktails—bringing a sweet touch of Calgary to every plate.

Our relationship with Galimax Trading connects us to an extensive network of organic farms across Alberta and British Columbia, including Amiable Organics, Blushlane Organics, Busy Bea Market Garden, and Kootenay Alpine Cheese. These local farms supply us with organic vegetables, dairy, grains, and specialty ingredients that form the foundation of our thoughtfully crafted menus.

For Alberta-raised proteins, we partner with Prepak Meats, known for their premium beef, poultry, pork, duck, and game meats. We also feature heritage-breed Mangalitsa pork from Eh Farms, a standout item on our upcoming menu.

When it comes to seafood, The Wilde on 27 partners with City Fish and North Sea Fish & Farms to bring in fresh East Coast oysters, scallops, lobster, and premium Canadian fish. We also work with Gindara Sablefish and Cape d’Or Salmon to ensure our seafood offerings are both sustainable and of the highest quality.

From the ingredients we source to the stories behind them, every detail at The Wilde on 27 is designed to deliver an unforgettable fine dining experience rooted in Canadian pride and culinary creativity.
